When buying a manual pasta maker there are several things to look for. First is how durable the machine is. For example, if one machine is metal and the other is plastic, it's pretty clear that the metal machine will be more durable. Second is whether the machine can adjust for thickness. It's important to gradually crank down the thickness of the pasta as you use the machine to knead the dough. You will also want to see if the machine has attachments for various kinds of pasta. For example it might make fettucini but have attachments for linguine, spaghetti, and lasagna. However don't buy attachments just to have them, be sure they are for kinds of pasta you would actually make. For lasagna you don't really need an attachment unless you want curly edges. The plain flat pasta that comes out of the machine will work just fine for lasagna. Also, don't be too concerned about other optional accessories. You can mix the dough by hand or in a good processor just fine. Also, the attachments that claim to make ravioli are usually just a way to make a mess. Ravioli is very easy to make by hand once you have the pasta rolled out, or you can buy a small plastic tray shaped ravioli maker for a few dollars and use the pasta shapes from your machine with that.
